Mack's Homemade Banana Bread w/Almonds
Hi all. So I've been cooking for a newly diagnosed type 2er since January and am always looking for low sugar, low carb snack ideas. This morning I altered a banana bread recipe with hopes of having a healthy snack for hubby. Keep in mind he has a very active job outside and takes a lunch everyday. This recipe has very little refined sugar and no flour. He gave me the thumbs up after he had a slice. I have already entered it into MFP under the same title as this post, based on getting 8 slices out of a loaf.:flowerforyou:
1/4 cup white sugar
1/2 cup apple sauce
1/2 cup trans free spread (I used Country Crock)
3 ripe bananas
1 cup ground flax
1 cup quick oats
1/2 cup chopped almonds
1 tsp baking soda
1 tsp baking powder
Mix all ingredients together in order, pour into greased bread pan. Bake at 350 for 50-60 minutes or when toothpick comes out clean.
