    Cucumber, tomato, carrots (all diced), feta cheese and an italian or balsamic dressing. I also like to add chicken for more protein and McCormick Salad Toppins for a tasty crunch. That's my favorite 'no-lettuce' salad. :-)

    craisins, walnuts, romaine lettuce, blue cheese, apple, with raspberry vinaigrette

    can of tuna, lettuce, honey dijon dressing, chopped almonds, minced carrot

    red onion, cucumber, carrot, cherry tomatoes, lettuce, shredded string cheese with ranch

    spinach with caramelized onions and sweet onion vinaigrette

    I quite literally just made a great salad and saved the recipe! Here's what I made:

    Blueberry Mango Salad

    A great summery salad with sweet blueberries and mango, a good mix of vegetables, plus dates and almonds for texture. Serves 5 as large, almost standalone salad or smaller portions for an appetizer. Great with fat free thousand island dressing which compliments the sweetness of the salad without being overpowering. Dressing not included in the calories at the end!

    Ingredients:
    6 C Premixed Salad (i.e. Entire Bag) or your choice of mixed greens. I used the Very Veggie by Dole and is used for calorie calculation.
    2 C fresh Spinach
    1 1/4 C (a heaping 1 C will do it) Broccoli Slaw
    1 medium Mango, peeled and diced
    1/2 C Blueberries, washed and dried
    1/4 C Chopped Dates (buy it this way; they are pitted, dried, and chopped)
    2 Tbsp sliced Almonds

    Directions:
    In a large bowl, mix together the greens and broccoli slaw. Add the blueberries, dates and almonds and mix. Then, add the mango and mix. I do it in this order for ease of mixing then mango last because it's messy.

    I made an amazing salad for lunch today...I had some sort of "healthy 8" fresh mix from Trader Joe's...it had cabbage, carrots, radishes, and a bunch of other things in it, cut small like a cole slaw mix. I tossed it with a can of tuna, a chopped green apple, a little bit of goat cheese, and some pear vinaigrette salad dressing, then sprinkled a tiny bit of original Fiber One on top of it. It was so good...I pretty much love every salad though.

    I like to do:

    - greens
    - dried cranberries with candied nuts (you can buy a bag of salad toppings from Wal-Mart that are made up of this, or do it seperately)
    - diced apple or pear
    - Light & Fit (from Aldi's) poppy seed dressing

    So tasty!

    Spinach salad with strawberries, walnuts,and fish, with strawberry or balsamic vinaigrette. My personal fave!

    I LOVE putting cottage cheese on my salad. I use a serving of cottage cheese, a serving of low fat dressing, veggies, some trail mix, and whatever I have in my cabinets. It is delicious! The cottage cheese adds protein and makes the dressing flavor stretch over the entire salad. Try it!!

    I make BBQ chicken salad

    1 piece of chicken breast
    as much lettuce as you want
    1 serving bbq sauce and 1 serving light ranch mixed together (sounds odd but very yummy)
    French fried onions 1 serving

    That is my base not a lot to it but filling and yummy...depending on my available calories, I have the following variations
    1. Ground turkey instead of chicken breast
    2. cheese
    3. corn
    4. ground chicken instead of chicken breast
    4. If I'm splurging, tortilla chips but that is few and far between

    I do a sort of greek gyro salad:

    Romaine lettuce
    Chopped Tomatoes
    Tzatziki (Greek Yogurt, shredded cucumber, dill, garlic... there are many different recipes for it, but that's what I use)
    Grilled chicken
    Shredded cheese (just about any cheese would be good)

    It's simple, and super low cal. I make it without the cheese sometimes, too.

    They all sound good. For the first one, I add lots of chopped grape tomatoes and scallions.

    My favorite for summer. 2 c. black beans, drained and rinsed
    2 c. frozen corn, I put the corn in an iron skillet and roast it on top of the stove
    1/2 c. red onion, or if you prefer green onion
    1/3 c. each red, green, yellow and orange bell pepper, small dice. If you like use only one or two colors.
    1 avocada chopped
    1/2 c. celery
    Toss the above

    Dressing: 1/2 c. olive oil
    1/3 c. lime juice
    1 or 2 cloves of garlic, minced
    salt, black pepper and ground red pepper to taste
    1/2 t. sugar

    I make this when company comes. On occasion I make it for just myself. I would say 1/2 to 3/4 cup is plenty depending on how hungry you are.

    ******************************************************************************************************************************************2 favorite dressings, good on any green salad.

    Avocada dressing: mash l avacoda and mix it with 1 cup of plain yogurt. Salt, pepper and lime or lemon juice.

    Garlic: 1/2 c. olive oil. Mince 2 cloves garlic. Chop at least 1/2 c. .fresh dill. Add some fresh parsley if you like.
