Veggie Recipes

I really would like some help with veggies. Other them cooking and eating them I don't know what else to do to vary the recipes and I get bored. Short of adding butter, does anyone know how to spice up veggies, perhaps pairings, recipes, seasonings, cooking methods, etc. ? :sad:

    I have gotten a box of long grain and wild rice and made it according to the package directions. I measure out a half cup of rice. Then I add a half cup of steamed sugar snap peas (I get the stam in the bag microwave kind). It is soooo good with seasoned Tilapia.

    I eat a lot of veggies just raw and dip them in some type of ranch dip lol. I'm boring.

    Either that or I steam them with some seasoned salt..

    Roast them! A little bit of olive oil and kosher salt and some basil or oregano. Tastes just like popcorn. Kale and brussels sprouts are my faves.
  • Bake zucchini, bell peppers, onons and any other veggies together in a pan with some olive oil and Mediterranean herb mix! Try it with some couscous and you have yourself and amazing balanced meal!

    I like roasting them or using them in stir fry. My mom also recently had eggplant lasagna--eggplant, tomato sauce and goat cheese are the only ingredients. Be creative using veggies in place of carbs or meat.

    I love steamed broccoli with some fresh cracked pepper and some parmesean cheese :)
    or roasted/sauteed/bbq'd aspargus drizzled with olive oil, fresh cracked pepper and a no salt roasted garlic seasoning
    or carrots and parsnips sliced sliced into rounds in a frying pan, drizzled with olive oil, fresh cracked pepper and a no salt roasted garlic seasoning

    Asparagus tossed with lemon juice and pepper and put under the broiler for 5 minutes...that's my new favorite. Other than that, I just eat a lot of vegetable soup and salads. Oh, and I toss handfuls of vegetables into my eggs in the morning...usually kale and some mushrooms. Super delicious. You can even throw spinach into your smoothie...what's helped me the most is just finding ways to add a little bit here and there.
