What is your favorite veggie and how do you prepare it??

Lately I have really had cravings for cauliflower...I do not like it raw at all so this is how I have been preparing it

Mashed Cauliflower (for 4)
1 head of cauliflower cleaned and cut
4 tbs fat free cream cheese
4 tbs fat free parmesan cheese
2 tbs light/fat free butter spread
garlic powder (to taste)
salt (to taste)
pepper (to taste)

steam cauliflower until tender and drain in strainer really well

Blend cauliflower in food processor/blender with all the ingredients and mix until desired consistency (I like mine really smooth)

Roasted Cauliflower
toss cauliflower (one head) in olive oil (about 1/2 tbs)
Add garlic powder, salt, and pepper to taste
Bake on baking sheet for 15 minutes at 450 (turn half-way)
Sprinkle Parmesan cheese on before eating

    Carrots and baby corn! I sprinkle with a pinch of salt and pepper and bake them in the oven!

    My favorite veggie is so hard! I love so many... depends on the time of the year.

    Asparagus...steamed lightly with a dash of salt and pepper

    Beets... baked or steamed, canned I don't care. I just love them with a little salt and pepper too!

    Cauliflower... steamed with a touch of miracle whip to dip it in.

    Brussel sprouts... steamed with salt and pepper...

    Squash all kinds... baked boiled or steamed... with garlic salt and pepper...

    I love veggies..

    zucchini, prepared any way :P

    lately i've been shredding it and pan frying it like hashbrowns to go with my eggs.

    tomato - slice and sprinkle a little salt
    brussel sprouts - brush with olive oil, roast in oven, sprinkle with lemon juice
    cauliflower - the mashed recipe op posted is terrific
    red bell peppers - NOM NOM NOM
    spinach - in salads, or slightly wilted on top of whatever's for dinner
    yellow squash - sauteed
    chard - see above

    i forget if potatoes count. basically, all vegetables. except asparagus. i religiously try to like asparagus a few times a year and fail :(

    Steamed brussel sprouts! :) Steamed asparagus is a close match. If I'm feeling patient, I might roast my brussel sproats with some olive oil spray and pepper.
