Genuine shirataki noodles vs. soy shirataki noodles

So I've done lots of research on soy and its benefits/disadvantages. I have hypothyroidism (thyroid isn't productive enough) and consuming too much soy could have a very negative affect on my health.
Too much soy can inhibit the body from absorbing iodine, a necessary nutrient for proper thyroid function.
BUT after doing a little research, I discovered that GENUINE shirataki noodles are made from elephant yams, or "konjac". This is an all natural, high-fiber plant and obviously contains no soy.
A lot of shirataki noodles contain soy agents to help reduce the "rubbery" feeling that the noodles have.
I have made a conscious effort to purchase shirtaki yam noodles instead of the soy kind. I've found a local asian market that sells them, and now I don't have to worry about overconsumption and hurting my body!!
