Tzatziki - Say it three times fast!

Tzatziki, or Greek yogurt sauce, is awesome on its own. It also goes in gyros and other Mediterranean sandwiches, goes alongside souvlaki (Greek meat skewers), or on a plate with lots of Greek food (dolmas, hummus, random grilled veggies, babaghanoush, rice, feta salad, spanikopita, etc.). But, seriously, try this on its own. It is yogurt, but it eats like something nice and savory.

8 oz. yogurt (as always, I use Nancy's nonfat plain yogurt because I just feel so much better about eating it)
1 tbsp olive oil
Lemon juice (of 1/4 lemon)
Salt / pepper to taste
Dash of dill (completely optional)
1.5 cloves of garlic, minced
One cucumber, seeded, peeled, and diced into little squares

Mix these guys together and let 'em marinate for at least one hour before serving. You can really easily double or quadruple this recipe if you're doing a Greek night. Don't forget the bedsheet togas and bota bag full o' cheap wine.

    I love Tzatziki! I put shredded, well drained cucumber in mine too.

    Oh my word! Thanks to Kaetra, I just added the most important part of this dish: cucumber!

    I don't know if you'll find a recipe for this anywhere that doesn't include cucumber. Whew! Thanks so much for the very important reminder...
