Dinner for one...

I could do with a few ideas for quick meals for one. On a Wednesday night, my boyfriend works late so I just need to cook a tea for myself. Ideally, with foods i have in the cupboard most of the time! Help!

For nights like this, I like to have some tilapia in the freezer. I get a large bag of them (individually wrapped). They defrost quickly and I can portion it out easily. And they are low cal! I usually have a potatoe and some sort of veggie (I always have them in the pantry).0

This is a good recipe and is easy to make - you can always cut down on the ingredients to make it just for one. I usually make it as the recipe calls and it feeds my husband, daughter and myself with a bit left over. I also usually make a box of cornbread to go along with. I don't use the tofu in the recipe b/c I never buy it but the other ingredients are pretty much staples!
