Frozen Egg White Dessert
I can't take credit for this recipe b/c I saw it on Natalie's Hodson's facebook fan page, but I made them last night and they are so GOOD! They are a good high protein treat that I will consistently use for my last meal! The taste a lot like a chocolate popsicle.
1/3 carton of 100% Egg whites (use the carton of egg whites b/c they are pasteurized and these things are not cooked)
2 TBS of cocoa
2 TBS of Splenda
1 TBS of Peanut butter
Whip the egg whites until soft peaks form and then beat in the other ingredients. Pour into 12 greased muffin tins and put in the freezer. Freeze for about 2 hours and then let sit on the counter for about 4 minutes. After 4 minutes they will easily pop right out of the tin! Eat them quickly and put the left overs back in the freezer b/c they did start to melt quickly!
