I'm a teacher on Spring Break and my goal this year is to find 5 healthy recipes that I'll enjoy both making AND eating
I'm trying my best to incorporate veggies but I'm not very fond.
Anyone willing to share your favorite quick and healthy meal? Doesn't matter breakfast, lunch, dinner, or dessert!

Not sure if this will help you any, but my most FAVORITE food blog is www.howsweeteats.com. Jessica usually posts some waist friendly recipes on here, and incorporates low fat cheeses, whole wheat pasta, lots of fish and poultry recipes on there (along with some KILLER cupcake/dessert recipes.
My family LOVES the BBQ Chicken Enchiladas recipe she has posted there, along with a lot of her baked chicken finger recipes...

Oh goodness, I LOVE Jessica too. She isn't the most fond of veggies either- but her recipes are awesome! I love Chocolate Pudding Cake- and the calories aren't insane as some desserts (if you use Hershey's Special Dark Best Life Cocoa).
Chocolate Pudding Cake
1 cup flour
1/2 cup sugar
2 tablespoons unsweetened dry cocoa
2 teaspoons Baking Powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons oil
2 teaspoon vanilla
1-1/2 cups boiling water

In large mixing bowl combine 1-cup flour, 1/2-cup sugar, 2 tablespoons
unsweetened dry cocoa, 2 teaspoons baking powder, 1/2 teaspoon salt and set
aside.
Mix together separately 1/2-cup milk, 2 tablespoons oil, 1-teaspoon vanilla
and with mixer on medium-high beat liquid into dry ingredients, beating 3
minutes or till smooth.
Spread batter evenly in bottom of an ungreased 9"square baking pan. Set
aside while you combine 3/4-cup sugar and 1/4-cup unsweetened dry cocoa
gradually stirring in 1 1/2-cups boiling water till it's smooth.
Pour carefully over batter in pan but do NOT stir it at all!
Bake at 350°F. about 30 minutes or till tester inserted in middle comes out
clean.
Serves 9 nicely.0 -
