Quinoa Salad

Like many of the recipes I post, this one is highly customizable. That's one reason it's awesome. Another reason is that the only unhealthy things are the ones you choose to add. In my version of quinoa salad, the only unhealthy things I add are debatably healthy: olive oil and a conservative amount of feta cheese.

I apologize for the lack of measurements. When I make this, I usually eyeball the ingredients and make a ton of it, so I have lots of leftovers for that month's healthy push toward weight loss.

First: make a ton of quinoa (boil it or whatever, then cool it off in the fridge and make sure it is relatively dry)

Second: chop a ton of fresh goodness. My recommendations are red bell pepper, red (purple?) onion, cucumber and tomato into tiny cubes, so they are very bite-sized. Don't forget to add some fresh spice action, like chopping parsley, cilantro, mint, dill, or all of them. If you aren't feeling creative, make sure you get some parsley in there.

Third: Toss with a small pile of feta (cut into small chunks, so you can spread the love) and a bit of olive oil / lemon juice.

Let this bad boy marinate, so the flavors can spread out.

Smoke 'em if you got 'em.

    The cilantro in this dish makes it ::pop:: and taste so fantastically fresh! It's also a somewhat filling dish for being so super healthful and low-cal.

  • I need to try this! I usually use my quinoa for warm salads -- my fav one is to add some kale at the very end of the quinoa's cooking time so it steams but doesn't get mushy, toss in some dried cranberries, and some homemade miso dressing. Yay quinoa!
