I just bought a bunch of kale. What is your favourite way to eat it?

I like a kale salad with blue cheese, apples, and hazelnuts. I also made kale chips. I found the recipe on the Food Network site. I think I overdid it with the salt and olive oil (you don't need much of either), but I did eat them all in a three-day span. One of the days I sprinkled them on my "regular" salad, which is half spinach/half spring mix, cucumbers, radish, red peppers, dressing.0

Kale chips.
Rinse, pat dry, put in pan, spray with a little oil, shake some sea salt on them.
Bake until crispy and eat!0 -
chopped up real fine by my magic bullet flat blade first, then added into a mango rice milk smoothie. Best thing ever.
Kale chips are good too. I also just put raw kale in a whole wheat pita with brown mustard. You can add other veg but I just stuff it full and have a kale pita, yum.0 -
I love Kale. I eat it in many different ways so it's hard to say, but today I'm eating Black Bean Soup with Kale and Rice. It was pretty easy to prepare in my slow cooker last night. I can inbox you the recipe if you are actually interested.
I also like Kale sauted with some soy sauce and mirin.
I also like chopped up in Lasagna and also in this sweet potato enchiladas recipe I have.
Lastly, you could always make a smoothie with it. That's what I do with my excess. Try some blueberries, some bananas, some ground flax, a handful of kale, some soymilk and some sweetener to taste.
Pretty much just go to a vegetarian/vegan site for recipes and all your kale problems will be solved.0 -

A kale pita huh? Well I might just try that one day because it sounds easy and you seem to like it very much.0 -

Is your temperature too high? They go from nice and crispy to burnt in no time at all. I've found that 15 mins (if you can, linger around the oven near the 12 minute mark to sniff for signs of burning) at 350 degrees yields some yummy chips. My problem is storage -- I like leaving the stems on but they hold too much moisture and make the chips go soggy. I think leaf-only kale chips would fare well. Good luck!0 -
I made braised kale last night. It was my first time having kale and I enjoyed it. I didn't have a recipe so I just made it up as I went along.
1 bunch of kale
chopped onion
minced garlic
2 strips turkey bacon (chopped)
1 cup FF low sodium chicken broth
Mrs Dash
pan spray
Preheat pan. Spray with oil. Add onion and garlic and stir until browned. Add turkey bacon and stir. Add kale and stir until it wilts down a bit. Add Mrs. Dash seasoning and stir. Continue to stir all the kale is wilted down. Add chicken broth and stir. Turn to low heat and cover. Let simmer until kale is tender. Enjoy.0 -

Love love love kale. Tonight I cooked three cups for dinner. After cooking turned out to be about 1.5 cups.
I melted 1/2 tblsp virgin coconut oil. Sauteed for a few mins. Then added 1/4 water and put the lid on tight to steam the kale. Then I added 2tblsp Newmans Own lite balsamic dressing. This was so good and filling. Fairly low carb and high fiber. Try it. I bet you'll like it!0
