    fajitas with quorn instead of chicken. Takes the time to chop the veg plus 5 miuntes, and is low calorie, low fat, low carb, high protein :)

    Mushroom risotto - my absolute favourite and it's done in half an hour max!

    Fry onions and mushrooms, add arborio rice and stir until coated in oil then add vegetable stock a bit at a time and stir until all absobed - Yum yum yum. I think I'll have that for tea tonight actually....

    Can add meat or other veggies too. I like pea and ham or chicken and sweetcorn too. xxx

    Frittata... eggs and whatever is in the fridge in the way of veg, but no potato... yum

    for salad this time of year... go out and gather wild garlic and wild mushrooms... shred and add an avocado and a few black olives... mmmmm ... :)

    - salad and bean wraps, or
    - veg and tofu stir fry, or
    - scrambled tofu on toast

    Veggie sandwich is quick and easy, plus you can add whatever you have in the fridge... So many options.

    My personal favourite is;

    Harvest grain bread
    Avocado
    grated carrot
    hummus
    and rocket with a squeeze of lemon juice

    Tofu Scramble;

    1 Onlon
    1 tsp oil
    Firm Tofu
    4 Large Mushrooms
    1/2 a Red Pepper
    Paprika
    ground corriander
    salt to taste
    and i like to add some Organic ketchup before eating YUM!

    Pea Soup

    Frozen Peas
    1 cup Soya milk
    salt and pepper to taste

    Once peas are cooked, drain and add to a blender with soya milk, salt and pepper until liquid.
    Serve with toast or bread. VERY quick!

    Tin of lentils. Grated carrot. Onion. Garlic. Soy sauce. Sugar. Vinegar. Some sort of shreded green vegetable, usually wombok and celery. Cook pasta. Voila, Lentilghetti Dahlonaise. I can't have tomato and mushroom because of food intolerances, but I'd strongly reccommend adding a tin of tomatoes or some passatta or something and some chopped mushrooms rather than the soy, sugar and vinegar if you have a more normal digestive system. ;p

    Chickpea Salad:

    1/2 c. Chickpeas (mashed)
    1 tbsp. Onion (diced)
    1 tbsp. Celery (diced)
    1 tbsp. Veganaise
    Pepper

    Mix together. Put over lettuce. Enjoy.

    I eat mine with Triscuits....mmm

    I was veggie for a long time. I used to make brown pasta and dolmio sauces on my really lazy days when I just wanted something good to eat.

    Brown bread toasted and scrambled eggs.

    Stacks of steam bag microwave veg and anything over based tofu...

    Stir fry veg and tofu :)

    Each of these are a biweekly meal -

    Enchilada
    canned refried/chili/plain beans
    frozen veggies (broccoli, asparagus, corn, peas, beans, etc)
    salsa
    tortilla or tortilla chips
    guacamole (depending on calorie expenditure)
    Quorn - chicken or beef if you wish


    Asian soup
    low sodium veggie broth
    faux meats (shrimp, crab, pork, etc)
    Szechuan sauce
    frozen veggies (I'm pretty liberal with these, so it can be more like a stew than a soup)
    seaweed flakes
    chopped mushrooms (portobella, ****ake)
    rice or noodles

    These are usually 20 minutes or less from start to chow time.
