Are there any recipes for a very quick and easy chicken noodle soup? I can go buy a can of it but I figured making my own would have more health benefits to it.
I've got a horrible cold and don't really want to do or eat anything, but my stomach is like eating itself right now from hunger, lol.

Any chicken noodle soup should be fine, just put the recipe into MFP to know what is appropriate to eat. Also, if you're sick, take vitamin Zinc, it helps shorten the life of a cold (by a lot). It's always been my magical cure. :-) Oh ya, I take it with food.0

Sorry to hear you are sick. I don't have any recipes for chicken soup, but I do know to stay away from Campbell's Chicken Noodle Soup if you are going to buy some. I cleaned it out of my cupboard when I noticed on the label it has somewhere around 900mg of sodium per cup. They ought to be arrested! So, good luck in getting well. I'm sure someone here can offer you a good, healthy recipe. :flowerforyou:
Oh yeah, like allison says. Zinc actually makes the cold virus so it can't replicate very well and drastically cuts the amount of virus in your system. In order for it to work the best, it should be taken at the first sign of a cold/flu. They make supplements that are pretty tasty as lozenges too.0 -
Here, you might like this, it's Mark Bittman's "soup matrix." (He's the guy who writes How to Cook Everything.) http://www.menshealth.com/nutrition/mark-bittman-easy-delicious-soup-recipes
Admittedly, my attitude is, you're sick. If you want Campbell's condensed salt for an army chicken soup, you should have it.0 -
Make a base of chicken stock, onions, celery including the celery leaves. Add cabbage, carrots and whatever veggies you have around the house. Note that Cauliflower and corn will strongly flavour the soup. I like adding squash (including pumpkin or spaghetti squash) and zuchinni, root veggies like sweet potato and rutabaga. Cook up.
I usually make it in a 2 litre pot, and refrigerate it. It is a great diet aid as wells as good for you.
For chicken stock, what I like doing is boiling the chicken from roast chicken overnight so that the flesh falls off the bones, and then removing the bones. But you can also buy ready made chicken soup stock in cans or in a tetra pack. Making your own means that there is no salt in it.0 -
Easy chicken soup when you are sick
1 rotissery chicken from the grocery store
1 bag of frozen vegetables for soup
2 quarts of chicken broth
1 slice of fresh ginger
Bring the broth and vegetables to a boil, add the chicken you have pulled off the bone and bring back to a boil. Put the slice of fresh ginger in the bottom of the bowl, then add your soup and let the ginger steep for a few minutes. Then take the ginger out if you think you may accidentally eat it. The ginger helps digestion as well as the tummy.
There is the long version where you get a whole raw chicken, bring it to a boil, cook it then pull out the chicken, add fresh vegetables to the stock you just boiled the meat in, then add the meat from the chicken back in, but that takes for ever and this way is healthier.
Good luck, sorry you feel bad. If you have a sore throat, I recommend Traditional Medicinal Throat Coat tea, its friggin amazing!0 -
Although a ton of sodium isn't great for you, you could probably use the electrolytes since you're sick.0

^ This is perfect, but if you wanna amp up the healthy, pick up low sodium chicken broth. And if you have the patience, some boneless skinless chicken breasts, and just boil them.0 -
Low sodium chicken stock, and whatever herbs you have on hand I have used dry parsley, marjoram, herbs de province, bayleaf whatever.. lol boneless skinless chicken cut into bite sized pieces, celery, onion, a tiny bit of garlic, a strip or two of peppers (green, red yellow) what ever you like. Add tons of veggies Carrots, zuchini, squash etc. you can even buy a bag or two of frozen mixed veggies and dump it in the stock pot along with the few fresh (celery onion, peppers) and let is cook away... about 20 mins before its done add some noodles. Enjoy!
Hope you feel better!0 -

I "think" the whole point of chicken soup when are sick is the sodium, not for sure though. I agree about the chicken breasts, much healthier that way.0 -
Pretty sure you WANT the salt. Or that's what I find anyway. Last time I was ill I made my own and It didn't seem to cure me as well as eating the properly processed packet one, it might have tasted of predominantly salt but it made me feel better and that's all that matters!0

Indeed it is. Warm salt water would work as well, but wouldn't taste as good. The Mayo CLinic recommends CLEAR chicken broth.0 -

Set stove top to medium high heat. Dice carrots and throw them in add a pinch of kosher salt and mix. Dice onion, throw it in and stir. Dice celery, throw it in and stir. Don't dice everything at once because carrots need to cook longer than onions and onions need to cook longer than celery. Saute until all veggies are soft. Add chicken stock, bay leaves, dill and uncooked rice and bring to a boil. Reduce to a low simmer and cover. Cook for 45 minutes or until the rice is soft (see rice cooking instructions.
Add chicken to soup before serving. Don't cook the chicken because it's already cooked. If you want extra yummy flavor, add some Gazebo Room Greek Dressing and adjust calories as per the bottle's nutrition info.0 -
