Side Dish Recipes??

Does anyone have any good side dish recipes? We are getting tired of the same ol' salads, vegetables, etc. We have tried and love the mashed cauliflower, cauliflower rice. Any help would be appreciated.

I like to roast various veggies (not all at once, except the carrots and beans!): potatoes cut like fries, cauliflower, baby carrots, green beens, etc, by tossing them in a big ziploc with olive oil and different seasonings (garlic salt, s&p, paprika, cayenne, etc) and then lay out on a cookie sheet and cook them in the oven until they are done all the way through to my liking. You could also cook spaghetti squash: poke holes in it and microwave for 10 minutes, then spoon out the seeds and use a fork to shred out the "noodles" of squash. Spray some butter spray, sprinkle with S&P.
Here is a more specific recipe, but just with cauliflower:
Roasted Curried Cauliflower
From A Big Mouthful
3 tbsp grapeseed oil
1 tsp mustard seeds
1 tsp cumin seeds
¾ tsp curry powder
¾ tsp salt
1 large head cauliflower (about 2 pounds), cut into large florets
Preheat oven to 375 degrees F. In a large bowl, stir together oil, mustard seeds, cumin seeds, curry powder and salt. Add the cauliflower, tossing to coat thoroughly with spice mixture.
Arrange cauliflower in a single layer on prepared sheet. Roast until florets are browned on bottom and tender when pierced with the tip of a paring knife, about 35 minutes.0 -
