I just bought this because it sounded good, but I have no idea what to do with it.

I haven't seen this in the stores, sounds good.
How about;
A wholewheat pita bread, with fresh strawberries and the LC?
Could you make a low fat cheesecake? Maybe a no bake one?
A topping for fresh fruit, or a dip for fruit,
Okay making myself want some now!!! ha ha!

I made wheat french toast and stuffed it with this. SO GOOD! Especially when you have homemade strawberry jam or just sliced strawberries up on top. Come to think of it...stuff your french toast with this AND sliced strawberries.0

I didn't fry my french toast in oil or anything. Just lightly sprayed a non-stick pan with canola oil spray.
Recipe was (roughly) as follows for 2 servings:
4 slices whole wheat bread (thickly sliced)
2 wedges laughing cow strawberries and cream cheese spread
1 tbsp I Can't Believe It's Not Butter Light Spread
2 medium eggs
1 tsp vanilla
Splash of milk
Strawberry jam or preserves (I use my homemade jam w/ no sugar added)
Sliced strawberries is optional
For the assembly, I spread one wedge of laughing cow cheese on one slice of bread and covered it with another slice of bread. I spread the ICBINB on each outward facing side of the bread.
Combine the milk, vanilla, and eggs in a bowl. Coat entire "sandwich" with egg mixture. Cook on the stove top with a nonstick skillet. Just cook it like you would normal french toast. When it's finished, put it on a plate and drizzle strawberry jam over the top and eat with sliced strawberries.0
