Watermelon salad - 130 cals!

Options
This is a salad I love making in Summer and always get lots of compliments on.

For one decent serving

200g watermelon
20g Danish feta (you can use low fat but there's not a huge difference and the creaminess of full fat is amazing)
1/8 red onion
1/2 tablespoon balsamic vinegar
handful of fresh mint leaves, torn

Combine all the ingredients and serve. SO yummy and fresh. You can mix with the portions depending on taste.

I know Nigella does it with lemon juice and olives but I like it simple. You can add fresh prawns (shrimp) and cucumber too! If you don't like feta, try it with haloumi (but the calories will be different)

Only 130 calories for a bowl of this. I take it to work for morning tea!

    I love semi-freezing watermelon chunks - it's like a watermelon Popsicle, and I always looking for new recipes and this recipe sounds great!
