Chia seed and coconut pancakes (pic)

Ingredients/First step:

10 grams (1tbsp) chia seeds
125ml (half cup) coconut milk

Soak these over night, or maybe for a few hours (enough so they swell)

Ingredients/ Second step:

Pour the soaked mix into a bowl and add

1 egg white
5 grams wheat free flour (or flour of choice)
15 grams oatbran (or ground rolled oats)
5 grams of dessicated coconut
1 tsp baking powder

Mix up and pour into a hot pan that has been turned to medium temp


I served mine with frozen banana (that kinda defrosted lol), fromage frais and honey

    The mix made one full serving which is the calories above

    You could half it if you wanted to, depends on how hungry you are
