I thought it would be fun to see what people are having to eat tonight. I'll start:

Cajun Cod Wraps with Slaw. And since I love my food, I'll have water for drinks.
This is a variation on two Cooking Light recipies (the Cajun Catfish Wrap with the Caked Cornmeal-Crusted Grouper).

Ingredients:
Fish: Cod, cornmeal, salt, paprika, thyme, oregano, garlic powder, black pepper, red pepper (dregged and baked at 450).

Slaw: cabbage, plain yogurt, honey, cider vinegar

and some kind of wrap: probably it will be corn tortillas.

Forgot to put in the nutritional info:
cal: 397, fat 11.7, protein 35.6, carb 36.6, fiber 3, chol 106mg, calc 126mg (but it's a lot lower since I'm not using the mayo or butter that they called for) Just didn't have time to look up the actual break down yet. This is from the cookbook.

    Dole mix salad
    1 tomato
    1/2 cup brown rice
    1/2 chicken breast cooked on the grill so no added fats
    and a glass of red wine

    opps had to eat out went for soul food
    salmon croquette, green beans, candied yams. the yams were the down fall but they were deeelish
    i'm hoping this was around 800 cals...really hoping

    1/2 cup of brown rice, roasted chicken leg, green peas 1/3 cup. something really simple and quick too hot to really be cooking.:smile:

    Oriental Salad...mandarin oranges, lettuce, crunchy noodles, cabbage, blackened shrimp and grilled chicken, tomatoes, and a little sesame dressing on the side!! Really delicious!
