We love turkey meat muffins. It's basically meatloaf with veggies cooked in muffin tins. I mix ground turkey breast with grated carrots, onion, zucchini, red pepper or sun dried tomato, some chopped spinach, 1 egg, 2 tbl milk, some breadcrumbs, and whatever spices you would normall add (garlic, basil etc...). Cook at 350 for about 25 min. They are really good!0

Zucchini/Turkey Boats
I found this recipe when I ingredient searched for ground turkey. Take large zucchini's, cut them in half legth wise and spoon a little of the middles out. Brown your turkey in advance with whatever seasoning you like and garlic. Drain fat. The recipe included adding corn to the meat mixture (I didn't) Place boats in baking dish meat side up. Sprinkle a little cheese (whatever kind you have in the house) fill with meat mixture, coat with spagetti sauce or diced tomoates and sprinkle with cheese. Bake 350 for 25 minutes. They are yummy, filling and low in calories and carbs.....0
