Thai Purple Sticky Rice ~244 cal

1 cup purple jasmine rice
3 cups water
pinch of salt
1/2 cup sugar
1 can un sweetened coconut milk
boil the rice in the water for about 45 minutes (you want your rice to be a bit soupy so you may need more water)
add sugar and and not quite the whole can of coconut milk.
Bring to a boil then bring down to a simmer until it thickens (will be like oatmeal ish)
take off heat and stir occasionally until its down to an edible temp
serve with the remaining coconut milk
makes 4 servings 244cal per serving
we made this when I was in culinary school. I LOVE IT and I'm not a big rice eater

umm.. I'm not sure the first thing that comes to mind is the almond silk or vanllia silk ... i'd think it would work the same... may need to experiment with itIs there a way to do this without coconut milk? Allergies...0 -

I found it first at costco then at sprouts (formerly henry's) but it can probably be found at whole foods or trader joes. It was with the quinoa and rice pastas.
At costco the brand was earthly choice. You can buy online but it is a much better price at costco. $6.50 for 3lbs. Online it is about the same for 14oz. In any case earthlychoice.com if you dont have any other options. :-)0
