ZenMomentum's High Protein Breakfast Burritos
These are really good breakfast burritos that have more than 1 gram of protein per 10 calories. Using turkey sausage makes the saturated fat acceptable. I have added this to the MFP food database.
Ingredients:
3 - Jimmy Dean - Turkey Sausage Links
2 - Mama Lupe's - Low Carb Tortillas
6 Tbsp (92g) - Egg Beaters - Liquid Egg Whites
1 teaspoon - Oil - Olive
1 oz - Hyvee Brand - 2% Natural Reduced Fat Mozzarella Cheese Finely Shredded
1/4 cup - Pico De Gallo or other veggies (optional)
Directions:
- Slice sausage into bite size pieces
- Heat 8" non-stick pan on Medium to Medium High
- Add olive oil, heat and disperse in pan
- Add sausage and brown
- (optional) add veggies/pico, stir for a minute
- Reduce heat to Medium Low to Medium
- Slide sausage to one side of pan and pour egg whites onto other side
- Add favorite seasoning to eggs if desired
- Gently stir eggs until cooked
- Sprinkle mozzarella over the top and let melt
- Heat tortillas briefly in the microwave 15-25 seconds
- Separate sausages,eggs and cheese into two sections and wrap in tortillas
