Guiltless Pot Pie
I made this tonight and it was amazing! I changed the recipe a bit and tweaked it- so here's the revised version-
Take a personal sized casserole dish, I used this one-

Ingredients-
1 cup creamed corn (no salt preferred)
1 chicken breast, cubed 1.5"
.5 cup green beans
1 carrot- shredded
1 tbsp cheese (I used asiago)
Spices- garlic powder, liquid smoke (mesquite) and Italian blend.
Toss corn, chicken, green beans and shredded carrot into bowl. Stir. Top with sprinkling of cheese. Place in oven at 350 for 35-45 minutes. I used a toaster oven so the full size oven time might vary.
It was so good and yummy! It's the yummiest replacement for pot pie I've had- ever!
This nutritional info is a bit off- they didn't have salt-free creamed corn in the database- so for now, it's just a guideline. Also- if you want to cut the saturated fat- leave off the cheese.
