QUICK and Yummy Salmon Lunch Idea!

So, I made this for lunch today and it was excellent! It looks too good to be healthy and quick...but it is!

Salmon Margherita Pizza (Serves 1)

1 pouch/can of salmon (3 oz)
EVOO spray
Italian Seasoning
Tomatoes (as many/little as you want)
Mozzarella Cheese (I used fat free)
Fresh Basil Leaves
Parmesan Cheese
1 Wrap (I used Flat Out Light Italian)

Take the wrap and spray it with a little of EVOO and toast it a bit in a toaster oven so it is crispy.

Mix the salmon with some Italian seasoning in a bowl

Chop the tomatoes into slices (I used cherry tomatoes and chopped them into smaller pieces)

When the wrap is toasted a bit, add the salmon, tomatoes, basil leaves, and top with the Parmesan and mozzarella cheese

I sprayed the pizza with a little more EVOO spray and sprinkled more Italian seasoning, salt, and pepper on top

Bake the pizza in the oven (I used a toaster oven) at 400-450 for about 8 minutes or so

Enjoy!!! It is really low cal, low carb (depending on the wrap) and very tasty and filling!
