I have a package of baby bella mushrooms leftover from a recipe and was wondering if anyone had any recipes that I could use them with? Thanks!

i just cooked a casserole with some baby bellas last night. it might a little more complicated than you're looking for, but i will tell you anyway because it was daggum delicious.

-cook polenta (1 cup dry = 3 cups cooked) - salt and pepper and whatever italian seasonings that you like
-generously spray a casserole dish - i used olive oil spray - and spread the three cups polenta in bottom of dish
-top polenta with cooked ground turkey - i cooked a whole pound and ended up using 3/4 of it - season as you like
-top turkey with sauteed veggies of your choice - i used 1 onion, 3 miced garlic cloves, 2 small zucchini and half package baby bellas in 1 teaspoon olive oil
-top all that with a can and a half of hunt's fire roasted diced tomatoes - drained (recommend this brand - super tasty)
-top that with 4 ounces shredded parmigiano regiano
-bake at 350 for 30 minutes

makes 6 generous and very filling portions with only 310 calories per portion.

probably more info than you wanted, but there you go :)

when you're cooking the veggies...do the onions first until transparent, then add zucchini for a bit, then add mushrooms and garlic. the onions need the most time to cook.
