Sensible Foods (http://sensiblefoods.com/) makes a line of freeze fried fruits and vegetables, called "crunch dried". The fruit ones have only fruit. The vegie ones all seem to have salt. Gluten free.

I've only tried the Sweet Organic Corn (70 calories, 37 mg sodium) and the Orchard Blend (apples,peaches and apricots - 70 calories, 15g sugars) so far, but I ordered a selection from their web site. Very tasty.
