My kids love this healthy meal!
Sloppy Joe Meat Loaf (from the Biggest Loser Family Cookbook)
Ingredients:
Olive oil spray
2/3 cup old-fashioned oats
1/3 cup + 1/4 cup + 1/4 cup canned sloppy joe sauce (I use Manwich)
2 large egg whites, lightly beaten
1 pound 96% lean ground beef
1/3 cup minced green bell pepper (two of my kids pick this out)
1/4 cup finely chopped sweet onion
1 clove fresh garlic, minced
Preheat the oven to 350. Lightly mist a 9" x 5" x 3" non-stick loaf pan with olive oil spray.
In medium mixing bowl, combine the oats, 1/3 cup + 1/4 cup of the sloppy joe sauce, and the egg whites. Let the mixture stand for 3 min or until the oats soften. Add the beef, bell pepper, onion, and garlic. With a fork or clean hands, mix until well combined.
Transfer the mixture to the prepared pan and spread so that the top is flat. Spread the remaining 1/4 cup sloppy joe sauce evenly over the top. Bake for 30 minutes or until the meat is no longer pink in the center. Let sit for 10 minutes. Cut into 8 slices and serve.
Serving is 2 slices.

225 calories (take off 30 calories if using 97% fat free ground turkey)

5g fat (2g saturated)
60 mg cholesterol
3g fiber
410 mg sodium
