Low-Fat Lemon Souffle Cheesecake

Prep Time: 15 min
Total Time: 4 hr 15 min
Makes: 8 servings


1 HONEY MAID Honey Grahams, crushed (about 3 Tbsp.), divided
2/3 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Lemon Flavor Sugar Free Low Calorie Gelatin
1 cup BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1 container (8 oz.) PHILADELPHIA Fat Free Cream Cheese
2 cups thawed COOL WHIP FREE Whipped Topping


SPRINKLE half of the crumbs onto side of 8- or 9-inch springform pan or 9-inch pie plate sprayed with cooking spray.
STIR boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Cool 5 minutes. Pour into blender container. Add cheeses; cover. Blend on medium speed until smooth, occasionally scraping down side of blender container. Pour into large bowl. Gently stir in whipped topping.
POUR into prepared pan; smooth top. Sprinkle remaining crumbs around outside edge. Refrigerate 4 hours or until set. Remove side of pan just before serving. Store leftover cheesecake in refrigerator.

    I got the recipe on the Jello website and they had it with different flavors like orange and lime...so definitely go for it! :)

    Awww man I can't have SF Jello. Any suggestions for substitutions??? Without adding the sugar of regular Jello that is.

    I made this yesterday with strawberry jello, and it was delicious.

    Also, instead of making in a spring form pan, I used the 1/2 cup individual containers made by Glad.

    I put the graham cracker crumbs on the bottom then poured the mixture into each container, and topped with the rest of the crumbs. This way it is already separated into individual servings and I won't be tempted to take more then one serving.

    THAT is a good idea for many things---especially those of us who had to clean our plates because the children in Africa were starving!!! I'll feel like I finished my plate!!123504.png
