Trouble hitting calories?

Ok I have noticed a lot of posts lately talking about upping your calorie intake to help boost metabolism. I have only been a member 2 days and so far both days I haven't hit my calorie goal. At first it gave me a goal of 1260 and of course that goes up the more I exercise. I've made much healthier choices and cut out soda except 1/2-1 a day so I keep going under. Today I was under by over 600 calories :grumble: so I'm not sure what to do. I've never been good at dieting due to my limited food preferences but I'm starting to wonder if my inability to loose/plateauing is due to me UNDER eating. Any suggestions?
Also when everyone talks about increase in calories, would that apply to other goals? Such as carbs, fat and protein? Or is it better to keep those down? I feel so lost... :frown:

I had trouble too then I started eating bigger breakfasts and it really helps me hit my calorie goal. Plus, I just feel better throughout the day! I used to skip breakfast entirely up until recently, but now I make sure I make time for it and it really does help!0

First off, do away with "diet" or low fat foods. Eat and drink regular foods (regular milk, cottage cheese, etc) - they have more calories in them than their "light" alternatives.
I'm a picky eater and learning to eat enough without consuming boat loads of junk was a little hard for me. I had do some experimenting with foods and found there were some I loved when I didn't think I did. I also found that no matter how hard I tried to like them, I simply couldn't.
Nuts and nut butters are an easy way to boost calories.
Take a medium size apple and 2 tablespoons of peanut butter - that's nearly 300 calories.0 -
I am hoping to see more replies on this topic. I am under just about eveyday and for the 5-6 days I am exercising I am WAY under. I am very interested in this topic and would love to see more food suggestions.
P.S. I could easily eat 1200 plus my exercise cals in pizza, I'm not always a dainty eater BUT really dont think that will help me reach my goal.:sad:
