So not in the mood for vegetables lately, help!

Lately I am so sick of vegetables and have mostly been avoiding them (unless found on pizza), and after eating a nutritious, healthy meal I don't feel like I'm getting enough energy. I must be doing something wrong. This week I've not eaten healthy and actually feel better than when I'm trying to be healthy. Maybe when I try I'm not doing it right? I can't stand the thought of forcing down healthy meals that I'm not in the mood for lately, but should I?

    Veggies are good for vitamins, minerals, and fiber, but most of your energy comes from sugars and carbohydrates. Make sure you're eating things like whole grains, and fruits as well. Also, make sure you're eating enough calories (check out the stickied posts if you haven't already).

    I don't know if this will help but.... I really am not a huge fan of salads. I find that if I cut my vegetables up ahead of time and dip them in some kind of low cal dressing I prefer them that way. Veggies platters are much better than salad in my book. Also if you aren't terribly worried about your sodium intake if you cut celery up and put it in a zip lock baggie then sprinkle some Johny's seasoning in the bag with it... shake it up... it is a nice replacement for potato chips. Still crunchy and salty but much healthier.
  • im in the same boat. All i can think of is to find new recipes to spruce them up a bit.

    If you are a fan of fruit, blend up a smoothie with a bunch of berries, maybe some dry oats, and throw in a serving of spinach. Days that I am low on veggies I will do this to sneak a few in. I hardly notice that the spinach is in there.

    Thanks for the tips everyone. I've been thinking about adding spinach or Kale to smoothies, I'll plan to do it this week. I'm really not a fan of salads lately, I used to dip veggies in low cal dips, I'll get back to that too. Thanks for reminding me that veggies can be a healthy, tasty snack (just add hummus!)

    I can relate. Tonight I made Uncle Ben's wild rice...and thought, what can I add to make it healthier....I added a cup of sliced mushrooms, a cup of broccoli and a cup of peas....and cooked them with the rice...it was delicious and seems a bit like cheating instead of dieting...I also added 2 grilled chicken breasts chopped into bite sized pieces making it into a rice casserole of sorts because I've been craving that type of food. It turned out to be 256 calories for a serving....making 4 servings....

    you could add any type of veggie you have on hand...and I think it would work out just fine. Asparagus comes to mind as a good one to add....yum.
