THE breakfast (or dinner) of CHAMPIONS!

Ok, so I love making breakfast for dinner because I love breakfast food and never have time to make it in the morning. So, I decided to make pancakes and a breakfast casserole for dinner....here is the recipe....

The best part is that this meal is LOW CARB, HIGH PROTEIN, FILLING, and DELICIOUS! What more could you ask for?!

Breakfast Casserole (Serves 4)

1 cup breakfast sausage (I used Jimmy Dean turkey sausage breakfast crumbles)
1 1/2 cups egg substitute
1/3 cup fat free milk
3/4 cup reduced fat cheddar cheese (I used 1/2 cup kraft fat free cheddar mixed with 2 ounces of cabot 75% fat free cheddar)
1/4 cup fat free (or reduced fat) ricotta cheese
1/2 cup broccoli cut up into small pieces

1. Pre-heat oven to 350
2. brown sausage and drain
3. layer casserole (I used a 2 quart casserole dish) with sausage
4. add cheddar cheese on top of sausage in casserole dish
5. layer in broccoli on top of cheese
6. mix milk and egg substitute together in bowl (I added salt and pepper and a little bit of nutmeg to flavor)
7. slowly pour egg mixture in casserole dish
8. take ricotta cheese and drop it in spreading it out in the casserole dish
9. Bake in oven for about 35-40 minutes (or until the casserole has set and is firm)

Oatmeal Cottage Cheese Pancakes (2 Servings: 3 pancakes each)

TRUST ME: YOU CANNOT TASTE THE COTTAGE CHEESE AT ALL!

1/2 cup oats (I used quick oats)
1/2 cup cottage cheese (I used 1% fat)
1/2 cup egg substitute
1/2 tsp baking powder
1/2 tsp vanilla extract
1/2 tsp cinnamon
1-2 packets of sweetener (I used splenda....you could also use honey if you'd like)

1. preheat griddle (if using one) to 350 degrees
2. put all ingredients EXCEPT OATS in blender and blend until smooth
3. add in oats and pulse until just mixed
4. make pancakes (1/4 cup of mix) on griddle...should make 6 total pancakes
