    Avocado salad with cucumber, goat cheese, red onions, and seasoned with a little salt and pepper!

    Add tomato and a bit of balsamic if y ou like too!

    One of the simplest delicious ways to have avocado:
    Cut in half
    Remove pit
    Score surface, leaving it inside the peel like a little bowl
    Sprinkle with a bit of salt and your favorite chili powder (check out www.spicehouse.com for the best selection ever!)
    Squeeze lime over surface
    Eat with spoon

    A little extreme, but it makes a great raw pudding. Puree with agave, cocoa camino, coconut oil and vanilla, chill for a great vegan/raw treat.

    And you can add a banana for chocolate banana pudding.......mmmmmmmm. It's so decadant!

    Great ideas! I could eat avocados just by themselves.. had some today sliced in a salad with chicken.

    You can mash it with a fork and add greek yoghurt and cumin/salt/pepper and it makes a nice salad dressing.

    Also a favorite deli type sandwich of mine, toasted whole grain bread, with kraft olive oil mayo, melted provolone, a generous layer of sliced smoked turkey, and dressed with bean sprouts (or lettuce if you don't like them) & a sliced quarter to half of an avocado.

    Yum.

    I love fresh avocado.

    Vegetarian Avocado and Veggie Wrap:
    fresh avocado
    red, orange, and yellow sweet bell peppers
    onion
    garlic
    red pepper
    fresh spinach
    lite cream cheese
    low calorie/low carb tortilla

    Sautee peppers, onion and garlic with olive oil spray
    Spread about 1tbsp cream cheese on tortilla
    Sprinkle red pepper over the cream cheese
    add onion, peppers, avocado and spinach
    wrap and eat!

    One wrap is about 250 calories.

    ripe avocados, an ounce or two, spread on bread with tomato, turkey and swiss...yummm. Eggs with peppers, onions, mushrooms, spinach topped with avocado.... turkey burgers with avocado instead of ketchup...LOVE AVOCADOS! :)

    This was my breakfast this morning

    1 slice Wheat Bread toasted with 0 calorie butter spray
    1/2 Avocado
    1/4 Tomato
    1/2 clove garlic
    a few slivers of brown/ yellow onion
    Squeeze of lime
    Pinch of Salt (Sea or Kosher are yummy)
    1/4 jalapeno cut into slices, and deseeded

    I like it just mashed up then spread on a veggie sandwich! It makes the sandwich seems like it has "sauce" on it!!

    avacado taco/burrito

    mash up, if desired add some spices.
    i usually cook a serving of brown rice to mix it
    add in some green pepper sauce
    maybe a little sour cream, salsa if desired. light and delicious!

    I normally cut it in half, take the stone out and fill the hole half way with balsamic vinegar and a bit of salt. AMAZING!

    One of my favourite meals:
    1 avocado
    half packet of lemon & coriander cous cous
    good handful of rocket
    1/4 tin of chick peas
    Dash of olive oil
    Dash of balsamic

    Mix all together and eat. Its yum!

    I like to cut them up and put a little salt on to eat. Sometimes a squirt of lemon.

    Another way is to make a panini type sandwich with turkey, avocado by itself or blended with a little mayo, provolone cheese, spinach, etc. It's good on the George Forman grill.

    Homemade guacamole is sooo good! I love it with homemade taquitos!

    Ingredients:

    4 large hard-boiled eggs, chopped
    4 hard boiled egg whites, chopped (discard the rest)
    1 medium hass avocado, cut into 1/2-inch pieces
    1 tbsp light mayonnaise
    1 tbsp fat free plain yogurt
    1/2 tablespoon finely chopped chives
    2 teaspoons red wine vinegar
    1/2 tsp Kosher salt
    pinch freshly ground pepper

    Directions:

    Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.

    One of my favorite healthy recipe blogs is skinnytaste.com and she has, in the last few days, posted some avacado recipes.. Two that I can remember off the top of my head are a avacado buttermilk dressing and an avacado egg salad.. They both look delicious! I really love the blog, the author always puts all the nutritional info with the recipe.. she even has the current and old weight watchers point system included in that info.. It's a great blog with some pretty amazing recipes!
