Well, turns out, we're about 99% sure I have celiac disease :/
So, being new to all this and everything, do any of you have any delicious recipes that are gluten free?

    Most of her stuff is gluten-free, or can be made gluten-free. I often make gf foods as a family member has a gluten intolerance and there are some fabulous recipes on there!

    Check out Pinterest! There are lots of great recipes there too! Also, be sure to check out your local library for some gluten free cookbooks!

    I'm gluten free too and here are a few of my favorite recipes I've created:

    Portabella Turkey Burgers
    Serves: 4

    Ingredients:
    1 pound ground Turkey
    2 teaspoons worcestershire Sauce
    2 teaspoons horseradish
    ¼ cup garlic and herb seasoning
    zest of one lime and juice of half the lime.
    1 cup portabella mushrooms, chopped
    2 tablespoon chicken broth

    Season to taste with:
    salt
    pepper
    dried parsley

    1. Chop mushrooms. Then sauté mushrooms in chicken broth in a skillet over medium-heat for 2 to -3 minutes.
    2. In a large bowl, combine all ingredients. Mix well.
    3. Form meat into 4 patties
    4. Grill or pan fry burgers for 20-24 minutes, until juices run clear, flipping halfway through.


    Balsamic Chicken
    1 pound boneless skinless chicken breast, cut in 4 even pieces.
    One (14.5oz) can diced tomatoes
    One (2.6oz) onion seasoning packet
    1 ½ cups balsamic vinegar
    ½ cup shredded dairy-free cheese
    Season to taste with:
    salt
    pepper
    italian seasoning
    1. Season both sides of chicken breast with italian seasoning, pepper, and salt.
    2. In a large skillet, heat 1 cup of the balsamic vinegar over medium heat.
    3. Place chicken in skillet.
    4. Add onion seasoning packet.
    5. Cook chicken for 10 minutes, then flip.
    6. Add diced tomatoes and remainder of vinegar. Cook additional 10 minutes.
    7. Turn heat down to low. Sprinkle chicken with cheese. Cook additional 3-5 minutes, until cheese melts.

    1. Cook pasta according to package directions, drain and set aside.
    2. In medium saucepan mix together peanut butter, oil, and vinegar over medium heat
    3. Add cooked pasta to sauce, mix well until evenly coated.
    4. Mix in red pepper flakes and sesame seeds. Cook an additional 3 to 5 minutes.

    Sesame Peanut Noodles

    Ingredients:
    4 ounces gluten-free pasta of your choice
    3/4 cup peanut butter
    4 tablespoons sesame oil
    2 tablespoons rice vinegar

    Season to taste with:
    red pepper flakes
    sesame seeds

    I have several GF cookbooks, but this is my favorite. However, I don't recommend it if you are looking for throw together type things. Nothing is overly complicated, but it doesn't use much of anything "premade". It has a great recipe for a GF flour mix that can be used in most recipes. The initial investment on the flours is expensive, but I saved a good bit of $$ by purchasing on line at vitacost.com.
