Dinner for two please!

Anyone have any good recipes for two people? Or recipes that keep well for leftovers? I'm so tired of throwing away leftovers but it's usually just me and my boyfriend that I'm feeding...we eat the leftovers for lunch the next day but sometimes theres'a LOT of leftovers...and yes I try to reduce portions when cooking...I'm not very good at it :embarassed:

    I take a can of Campbell's Chunky soup and add two servings of lentils, orzo, quinoa, farro, or brown rice. It makes an appropriately sized portion for two people and is pretty balanced in terms of carbs, protein, and fat... depending on which type of soup you choose.

    I also like the Green Giant steamers- specifically the roasted red potatoes and green beans in rosemary butter sauce. You just put it in the microwave for 6 minutes and it steams two servings perfectly. This is really good topping a small serving of cheese ravioli or tortellini.

    Sometimes I use leftovers so I'll have 4 servings. Anything more than that I usually note next to the recipe. Most recipes can be shrunk for two people. Just takes some creative thinking hehe!

    My husband often doubles or triples a recipe and after we portion out what we want for that week, then we freeze the rest. This works for a bunch of our favorites (chili, turkey soup, turkey burgers, spaghetti sauce, goulash, more). Otherwise, many recipes can pretty easily be halved.
