dishes from a whole chicken..... ideas?

Thinking of doing some bulk cooking this weekend to make my work week a little easier. For parties and potlucks I will often buy a whole chicken, cook it, shred it and make shredded chicken sandwiches or buffalo chicken dip. Need some healther/lighter alternatives:

1. What other dishes can i make with shredded chicken?
2. How long will shredded chicken keep once it's been cooked?

    Not sure how long the chicken will last, but I usually keep mine for about 7-9 days...by then we've eaten it all anyway.

    Here's a couple of ideas:

    > You can use the whole wheat misson tortillas and make wraps or even make quesadillas with the chicken. (that's what I do)
    > Baked Eggs for breakfast: mix the shredded chicken with eggs & egg whites, onions, peppers, mushrooms, asparagus etc and bake it.
    > Chicken pizzas: use a whole wheat tortilla or Flat Out Bread for the crust. Add healthy veggies to the chicken, a little sauce, and a little cheese then bake

    Chicken salad or just dice up some chicken and eat over a green salad. I have made a pot pieish dish in the past. I saute veggies in a pan, add shredded chicken, low fat milk, and thicken with flour. Let it simmer until thick and season to taste. Tastes just like the inside of a chicken pot pie but a lot healthier. You can serve it over brown rice.

    I always use the carcass/parts to make a chicken stock. I assume this is healthy, not really sure. I usually use the stock to make a veggie soup. That way it is healthy and full of veggies but still has some protein and delicious chicken flavor. I really like using summer squash/zucchini, corn and green chile to make a calabacitas inspired soup. (I'm from New Mexico, so I like it really spicy.)

    i eat chicken more often than any other meat, and would like to get this bulk cooking thing into my regular Sunday routine. With children, full time work, and house/yard maintenance, i barely have time during the week to do anything and think this will help!

    I do the same thing with whole chickens. I cook it in the crock pot and shred the meat. I usually end up with at least 4 bags of meat that I use for different meals. We had chicken enchiladas last night using thin corn tortillas, enchilada sauce, salsa, and queso. It ended up being less than 300cal per serving of two enchiladas. I submitted my recipe to mfp so you should be able to search it soon.... shiloh's cheesy enchiladas. I also combine the chicken with rice and whole grain pasta for quick meals :0)

    Yep- I get whole birds from a local farm, and we like to grill them upright on a beer can. Our favorite leftovers are quesadillas.
    Dice up 1 breast, and mix with black beans, chopped onion, green pepper, corn, etc, and heat through in a skillet (med high heat). Remove the mix when sizzly and scrape the skillet well. Apply a cooking spray or a half tablespoon of olive oil to the skillet. Take a whole wheat tortilla placed flat, and take your fingers and turn it to spread the oil evenly. Add a small amount shredded cheese to one half of the tortilla, a couple of spoonfuls of filling, some fresh cilantro and lime if you've got it, and a small amount of shredded cheese on top. Close the tortilla. Flip when bottom side starts to brown and crisp (usually 3 min or so), and finish cooking for another 2-3 minutes. Transfer to a cutting board and slice into 3 wedges before serving with salsa.

    Chicken and cooked wild rice make a healthy hot dish... add a few veggies, herbs and a chopped up apple. Bake covered until veggies are tender crisp (~30 min?)

    YOU GUYS/GALS ARE AWESOME. i have the following ideas that i'm going to transfer to an index card and tape to inside of my kitchen cabinet for easy reference:

    - chicken with wild rice and apples
    - curried chicken
    - chicken noodle soup
    - chicken/veggie quiche
    - beer can chicken
    - enchiladas
    - quesadillas
    - chicken pizza
    - chicken spaghetti (??)
    - calabacitos (gonna have to google this one!)

    That is alot of variety, i LOVE it! Thanks.
