Breakfast Fritatta (With Pic)
Or should I call it, Breakfast OMGatta?
Saturday mornings are a little crazy in this house. My 5 year old plays soccer so it's like a mad dash around the house trying to get the peoples of this house fed, changed, and ready to be on the fields by 10am.
This past Saturday I made a breakfast fritatta so that we could all just grab and go. It turned out amazing!
You will need:
5 eggs (or you can totally make this with egg whites only)
2 egg whites
1/3 cup milk
1/2 large russet potato, shredded
spinach
onion flakes
diced tomato
salt and pepper to taste
minced garlic
pam spray
1 cup shredded mozz and some to add to the top.
Preheat oven on 375
In a skillet, spray some pam and add shredded potatoes. Cook until the potatoes are soft. While potatoes are cooking, whisk all the eggs and milk together and add the tomatoes. When potatoes are soft, add garlic, onion flakes and spinach and mix until the spinach wilts. Set aside and let cool for 5 minutes.
In a small (2.2 qt) pyrex, add pam spray.
Add the potato and spinach mixture to the egg mixture and mix. Add salt and pepper to taste. add your 1 cup of cheese to the mix and mix. Add mixture to pyrex. Top with a little bit more cheese and bake in the oven on 375 for 30 minutes.

Yum! I do the same thing with spinach, mushrooms, onion, ham and cheddar. I use almost all egg whites and it turns out great- I'm definitely gonna try this version too!0
