Whats your favorite salad recipe?

I'm stuck in a rut for the salads I take for lunch. Any suggestions?

  • I do spring mix most days, and then mix in any combination of the following:

    sliced almonds
    roma tomatoes
    shredded carrots
    craisons
    sliced strawberries
    blueberries
    low fat string cheese (colby jack or mozzerella) sliced
    grilled chicken
    ground turkey

    I also mix up my dressings pretty frequently, and that helps keep it fresh! Hope that helps!

    I make a Falafel Salad:

    Lettuce, tomatoes, cucmber, red peppers, feta cheese, mini falafels and hummus....yummy and filling! :)

    I like to use leftover steak in my salad. It makes me feel terribly indulgent.
    Spinach
    Left over steak
    Carrots
    Mushroom
    A string cheese stick cut up
    Whatever dressing I have at the time

    Just a few bites of the steak makes the salad for me.
    Although, leftovers in general are good for salads I find.

    I use either baby spring mix or baby spinach (or both sometimes!) as my base. Then I add some some combination of the following toppings. I also mix up the dressings so that I'm not getting too bored. The only things that are consistent are that I usually have tomatoes (love them!) and some sort of cheese.

    tomatoes
    cucumbers
    zucchini
    green onions
    carrots
    hard boiled egg
    avacado
    pomegranate seeds
    pine nuts (I toast my own)
    pumpkin seeds
    sunflower seeds
    almonds
    cheese of any kind (the mini-babybell light rounds have 50 cals each and can be shredded or chopped up - also low fat feta is low cal)
    beans (garbanzo or black are my fsav's)
    tuna
    chicken
    deli meat
    shrimp

    Salads are so versatile and so good for you. I don't care for mushrooms or peppers but if you like them they would be good toppings too!
  • My go-to is a taco salad. Chopped romaine, sliced green onions, red peppers, salsa, refried beans, and a giant bowl of it.

    The one I ate for lunch today was a bit more simple. I had thinly sliced romaine, diced celery, diced celery, brown lentils and balsamic vinegar.
  • I add many of the same things in and my salad is boring. I also use two different dressing together for a different twist. I avoid creamy dressing. Adding fruits is the best!

    Ready washed italian salad, cubed emmental, torn up chicken, cashew nuts, drizzle of olive oil, drizzle of balsamic vinegar.

    Not the most healthy, but it makes a brilliant dinner :)
  • I try and vegetables that I haven't had in a while or have never had to give my salads a new twist. Recently I have used radishes, alfalfa sprouts, pea pods

    Tilapia Caesar salad, no real recipe I just throw it together:

    Low Cal, or Lite Caesar dressing
    Romaine lettuce
    Spinach leaves
    Parmesan
    Bacon bits
    Tomato
    AND.... Baked Garlic Parmesan Tilapia (best is you put this on the salad right out of the oven)

    It is SO delicious!

    I also LOVE fruity salads
    Spinach Greens Topped w/ misc berries (Blueberries, strawberries, Raspberries, Blackberries), a little parmesan cheese, sliced ham or turkey on top w/ rasp. vinaigrette

    Carribean Chicken Salad
    Spicy Grilled Chicken on top of a bed of lettuce: Topped with Mandarin oranges, dried cranberries, feta cheese, strawberries and mangoes and topped with rasp. vinaigrette.

    Honestly I could go on... but I'd be here for a while. I LOVE SALADS!

    This is my favorite salad, ever!

    3 cups spinach
    50 g raspberries
    28 g fat free feta cheese
    1 serving of Annies Lite Raspberry Vinaigrette

    My new favourite spinach fruit salad:

    Ingredients
    spinach
    red delicious apple, sliced (I never include this)
    orange, cut into wedges (blood oranges are the best I've found)
    walnuts, roughly chopped
    raisins or dried cranberries or dates (my favourite)
    goat cheese (plain)

    Vinaigrette Dressing (enough for two salads, scale as needed)
    2 Tbs. olive oil
    1 Tbs. balsamic vinegar
    1 Tbs. honey
    1 Tbs. orange juice
    1 Tbs. Parmesan cheese
    1 tsp. poppy seeds
    salt and pepper to taste

    Enjoy!

    Definitely adding fruit really makes a difference! I love grapes and apple in mine! Along with nuts and feta cheese! :happy:

    All of my salads follow this basic recipe:

    - Bed of greens (usually just baby spinach, but sometimes I'll do a spring mix!)
    - 1-2 vegetables (LOVE onions and tomatoes, sometimes use cucumbers, baby carrots, or anything else I have on hand.)
    - Fruit (favorite? strawberries! I love strawberries and spinach together. I'll always add at least one fruit, but often add 2 or more. I experiment with different flavors and textures--sometimes I'll add some canned fruit, fresh fruit, and dried fruit for variation. I love cranberries, peaches, pears, and apples.
    - Nuts (I always need some nutty crunch. I love walnuts, pecans, macademia nuts, cashews, almonds, and pistachios.)
    - CHEESE! (Goat cheese is my hands-down fave. But I do love feta, gorgonzola, and mozzarella for certain situations).

    My go-to dressing changes all the time. It starts with a base of olive oil and (dark or light) vinegar and a little fresh lemon juice. Sometimes I'll follow with a little sugar for sweetness (feel free to use Splenda or Sweet-n-Low--I can't stomach artifical sweeteners so I try to go light with the real stuff), or I'll add some herbs or spices for a more savory flavor. I like adding strawberry jam, sugar, lemon juice, oil, and vinegar for an amazing strawberry vinagerette which goes AMAZING with my signature salad: baby spinach, red onion, strawberries, dried cranberries, walnuts (or pecans), and dollops of goat cheese.

  • I've been making tuna salad with plain yogurt instead of mayo (I use tuna in the packet with water). Then I put that on top of baby spinach and romaine tossed with a little olive oil, lemon juice, salt & pepper, craisins and chopped walnuts. It is soo delicious, filling, and healthy!

    I call this one my "Famous Salad":

    -equal parts spring mix and romaine, shredded into nice good size chunks
    -A handful of rinsed garbanzo beans
    -shoestring beets, or sliced beets (must be the marinated kind though, not raw)
    -slices or crumbles of hard-boiled egg
    -feta/goat cheese crumbles
    -maybe one other add-in that I might have in my fridge, mushrooms, tomatoes or something like that)

    very light salad dressing of my choice, right now I'm into light goddess.

    I could eat this all day (and I sometimes do!)

    1/4 cup each corn, red bell pepper, black beans
    4 oz grilled chicken
    Dressing mix 1 T hidden valley lite ranch dressing and 1 T BBQ sauce
    I add 2 T crunchy salad toppers too

    I love salads but my are very plain and boring unfortunately but very very good.

    Grilled chicken (I add lemon, yum)
    Organic Baby Spinach
    A little cheese
    Sometimes I add carrots, but not really
    Top it with yummy croutons

    Plain but very good!

    Very simple, very healthy, and very yummy. You really don't even need dressing, because of the crumbled feta.

    I love Beefalo (Grass Fed Bison) as it is low in calories and fat. I use the ground beefalo mixed with taco seasoning usually. And add lettuce, banana peppers, fat free cheese and a low cal, low fat, low sugar dressing. I cooked a roast in a crock pot on Saturday and didn't eat it all. It shredded up nicely so I've been using that on my salad. YUM.

    I purchased a sauce at a craft show (you know handing out samples with pretzels) and fell in love with it. It's called Original Spunky Sauce. No nutritional info on it, but I love it. Thank God our local Country Peddlers Market carries it. I use it every day for the dressing on my salad. I calculated what I thought was in it and use that for logging. It's got some zing and it makes the salad oh so great!
