Any salad ideas for a BBQ??

Hello All!! I need some ideas.
My boyfriends mom is having a BBQ this weekend and we are assigned to bring a type of 'salad'. It can be a fruit salad, pasta salad, potato salad, you name it! Any low cal ideas??

Hi, Take whole wheat thin spaghetti- fat free italian dressing and some grape tomatoes ,onions and green and red peppers - Cook the pasta and cool- add the dressing and the chopped veggies. Add some salad supreme seasoning. Chill. Super yummy ! Cindy0

1 can of chick peas -rinsed and drained
half a cucumber seeded and chopped
1 red pepper chopped
1/2 red onion chopped
8 cherry tomatoes cut in half
1/4 cup crumbled feta
Mix together 2 tsp of olive oil, juice of 1 lemon, 2 tbsp parsley flakes and 3/4 tsp of garlic powder.
Toss the oil/lemon dressing through the veggies.
Let it sit for a while and it is even better the next day0 -
This recipe is from Cooking Light. It's pretty good; only 152 calories per serving. I make this for a quick dinner. You can even omit the chicken for a lower-calorie side dish option.
Asian Chicken Slaw
Yield: 6 servings (serving size: about 1 1/2 cups)
Ingredients
Slaw:
2 1/2 cups shredded cooked chicken breast (about 1 pound)
3/4 cup finely chopped celery
1/2 cup chopped sugar snap peas
1/2 cup chopped red bell pepper
1/4 cup finely chopped onion
1 (10-ounce) package angel hair slaw
1 (8-ounce) can sliced water chestnuts, drained
Dressing:
1/4 cup cider vinegar
1/4 cup rice wine vinegar
2 tablespoons sugar
1 teaspoon salt
2 teaspoons low-sodium soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
Remaining ingredients:
1/4 cup slivered almonds, toasted
1 teaspoon sesame seeds, toasted
Preparation
To prepare slaw, combine the first 7 ingredients in a large bowl.
To prepare dressing, combine cider vinegar and next 6 ingredients (through black pepper) in a small bowl; stir with a whisk. Pour dressing over the slaw; toss to coat. Cover and chill 1 hour. Sprinkle with slivered almonds and sesame seeds before serving.

My mum makes a lovely Tomato and Onion Salad with Salt and Pepper seasoning with Balsamic Vinegar ( i dont know the nutritional values for that)
How about...
Rocket Leaves, Cos or Romain Leaves, Cucumber, Red and Orange Pepper slices (usually in rings), Tomato (cherry preferably sp.), Celery, Baby sweetcorn slices (or canned sweetcorn in water), Onion, Shredded Carrot... Oooh Maybe even some chopped grapes, and then drizzle some olive oil on with salt and pepper seasoning? and TOSS!! :laugh:
Maybe a medditeranian style.. sp.
Cubed Red and Orange Bell Pepper, Cubed Red Onion, Cubed Cucumber, Olives (if you like them?) Feta cheese cubed, Cherry tomato, Drizzle of olive oil, squeeze of fresh lemon juice, fresh basil for garnish + salt and pepper...TOSS0 -
How about a tuna bean salad.
Can of tuna - in brine or water
mixed bean salad - usually tinned but can add any kind of beans.
olive oil
balsamic vinegar
salt and pepper
and any veg or salad leaves.
can add pasta to this as well.
red onion is good in this as well.
The whole thing is about 300 kcal (without the pasta).
Its very tasty and quite light as a side dish.0 -
3 heads broccolli chopped
1 head califlower chopped
1 chopped cucumber
3 or 4 green onions
black olives or green olives (I like black. . . recipe calls for green)
4 or 5 tomatoes
mix this up. . .let it set a while. . . salt and pepper to taste!!
