Low carb but not high fat?

Hey everyone!
I have decided since I am self proclaimed carb addict that I need to get those out of my diet to jump start weight loss. I am not getting rid of them completely, but severely limiting carbs other then fruits and veggies (ie. one grain product a day). I am finding it hard to reach my calorie goals with this unless I add things that are high in fat, which I don't want to do too much of. I don't want to eat below my 1200 calories since I also work out. Any suggestions? Unfortunately I don't like fish which limits healthy options as well. For reference, I am trying to stay under 60g of carbs on days I don't work out adn 75g on days that I do.
I have read all the posts that are for and against low carb, I am not asking for that feedback, I am asking for suggestions for those that use it and have it work for them.

You're going to have to go higher on your fat percentage a certain extent when you lower your carbs. I do Primal/Paleo and *all* of my carbs come from fruits and veggies. (When I'm good, post Easter has gotten me off track). My breakdown has been around 20-25% protein, 25-30% carb, and 50% fat. Don't worry too much about the fat, your body needs fat and when you up your protein it's going to go up some. The low fat thing has been debunked for some time. Just focus on healthy fats when you can, quite a few of mine come from nuts and coconut oil. You're welcome to take a look at my diary to see how I do no grain. Just keep in mind I am working to build muscle mass, not lose pounds, but in as healthy a way as possible, just upping my intake.0

I've been low carb since February. I do eat a lot of fish but I find that chicken is a low fat high protein option also. I buy the boneless, skinless chicken tenders and bake them. Depending on the type of red meat you buy it can be low fat too. I hope this helps.0
