Oatmeal Pancakes-73 calories each!
These pancakes are filling, just the right amount of sweet, and the texture is wonderful! Serve with sugar free syrup or preserves.
Heat 1 c milk (I used almond milk)
Add 2/3 c old fashioned oats, heat until hot
Stir in mixing bowl: 2/3 c flour (you could probably use wheat flour but I haven't tried that yet), 1 1/2 t baking powder, 1/4 t salt, 1/4 t cinnamon; make a well.
Stir in small bowl: 2 egg whites (or 2 eggs-more cals), 2 t cooking oil (you could probably substitute unsweetened applesauce here but I haven't tried that), 1/4 t vanilla, and 2 T sugar free pancake syrup (original recipe called for 2 T brown sugar mixed in with dry ingredients but I found this substitution worked well).
Pour wet ingredients into bowl with dry ingredients; stir.
Cook in nonstick skillet-use 1/4 c batter per pancake. Makes 8 pancakes.

splash of vanilla (tsp or so)
toss in blender and pour into pan.........
316 calories, 33 carbs, 36 protein, 4 fat...........
yields about 12-15 depending on size pancakes...........could serve two.......but I am a piggie.
