Recipe Substitution for Heavy Cream

Hiyas all - I've been experimenting with recipes to try to make them a little healthier....

For example, my family LOVES stuff like White Chicken Chili - calls for quite a bit of heavy cream.

Well, I've been substituting canned evaporated milk for anything that calls for heavy cream... as long as you don't have to whip it (haven't tried that yet, but hear that may work as well? :huh: ) it's performed beautifully in recipes so far, in baking, in soups, and otherwise.


A TBSP of heavy cream has:
60 cals, 0 protein, 6 g fat, 0 carbs, 0 sugar...

A TBSP of Evaporated Milk has:
20 cals, 1 protein, 1 fat, 2 carbs, 2 sugar....

Tastes pretty darned good in coffee and tea, too. :love:

    Thanks. I have avoided cream recipes, but love white sauces. I will try this with my friends Dijon Mustard Chicken

    Any dairy free suggestions? I recently discovered casein is my issue, so can't even take lactaid :( So looking for ideas!

    Keegiejae, I know there are a lot of people here who use coconut milk, soy milk, almond milk, and rice milk... i wish i knew what would work for you! I will kep my eyes open for milk-free options.... I read a looooot..... lol
