Every year to help bring in spring my station has a private get together called affectionately by our wife's the annual firefighter sausage fest. Anyway a weekend long camp outside, freeze our *kitten* off at while drinking our faces off. But the best part is our private ribs and sausage competition. Winner gets a single vacation day from everyone who enters.
Need help finding a new rib sauce, I've never won this effin thing. And I want this to be my year!

Like a BBQ sauce?
You're gonna have to just make something and taste and play around until you find the right combo ... .. use molasses, fresh tomatoes, dark brown sugar, and definitely apple cider vinegar. I'm a big fan of super-spicy sauce, too, so make sure you add cayenne. OH, do some adobo chiles, that might be good....0 -
I have the perfect sausage sauce. But must recieve a personal invite to the sausage fest in order to share it.0

There is a "java ribs" (coffee) recipe in the "Company's coming most loved barbecuing" cookbook. I use it when I do ribs on the BBQ and everyone loves them! Mmmmmmmm.~ Good Luck!0

If you want something different, try something like this:
http://www.eatingwell.com/recipes/blueberry_bourbon_barbecue_sauce.html
The blueberry bourbon combination is freaking awesome, but I've also tweaked the recipe to use sweet cherries + chipotle peppers OR tart apples + red onions (with a hit of cinnamon to go with the apples) instead of the blueberries. All of the versions I made were tasty, but the blueberry bourbon and the apple-cinnamon & onion were easily the fan favorites.0 -

Thank you for giving me a mental picture of the "Fireman's Sausage Fest". I will happily sit at my desk thinking about it for the rest of the day...0

Don't make it.... buy yourself a few bottles of "Diana's Rib & Chicken" sauce online and have it shipped... very few americans know what it is.... it's made in Canada.... you will win, can almost guarantee it !!
*** Update : just checked, they don't sell online, but I think you can buy it on Ebay...take a look0 -
if you have to make it, then idk i'm still a work in process when it comes to cooking!
If you can buy it try Sonny Bryans Sauce, its delicious and can be shipped anywhere in the USA within 2-3 days.
Here is the website https://www.sonnybryans.com/orderonline.php0 -
I sent you the Raspberry Jalapeno Sauce recipe.
You asked about marinating first. I wouldn't. I think a rub would be better prior to BBQing. Marinade would dominate the taste.
Good Luck.0 -

Yes, put me on that invite list!!!0 -
With the proper rub & smoke...you don't need no flippin' sauce! If you have to, look up a good Carolina sauce you can make.0
-
If you can use bought BBQ sauce....Head Country from Oklahoma. You can buy it online. They also have a rub and I use their products exclusive to BBQ. Plus, think of all the additional jokes you can get in with Head Country and sausage fest. It's a win-win situation.
If you have to make your own you better start looking online and get to practicing.0 -
Get the BBQ Bible and start trying some of the recipes. I have never made anything from this cookbook I didn't love. When you find something you like, make some changes to personalize the recipe. Also, consider a more non-traditional sauce--sometimes something different stands out in a competition.

Amen to that! I have sauce to be a proper host, but I never need it for my brisket or beer can chicken.0
