Do you all have some good ground beef recipes? Low carb and low cal.....I'd appreciate it:)

    And we must be the only ones lol. What I usually do is brown and season beef, add onions, and then add black beans, sometimes corn, and put over rice. It's pretty good, but I need something new..:>/

    not new or exciting but i made some great taco meat tonight and threw it in with some salad mix & a little cheddar and had taco salad

    1 lb 95% ground sirloin
    lower sodium taco seasoning:
    2 TBL mexican chili powder
    1 TSP cumin
    1 TSP ground garlic
    2 TSP onion powder
    2 TSP paprika
    1 TSP oregano
    1 TSP hot pepper flakes (i like it spicy!)
    1/4 TSP salt
    2 TBL flour

    browned meat in skillet with one small chopped onion and one habenero pepper (i love my food processor!) and 1/2 cup water

    best taco meat i've ever made if i do say so myself! I think this weekend I'm going to use some of the left overs and make boats out of jalepeno peppers and bake in oven & top with a little shredded cheddar/colby jack

  • Elsewhere on the internets I found a recipe that the OP refers to as "meat slop", and I make a version of that. I brown two pounds of ground beef, pour it into a collander and rinse it under hot water to remove as much of the fat as possible. Set it aside. Saute a chopped red onion and a yellow onion in a little canola oil until translucent. Then add a bunch of minced garlic and saute about one more minute. Then add one coarsely chopped head of cabbage, one large can of crushed tomatoes, a small can of tomato paste, one can of lima beans, some chicken stock, salt and pepper, Wocestershire sauce and some dried oregano, marjoram and thyme. Next stir the ground beef back in. Finally let is simmer until the cabbage is done to your liking. It's not pretty, but it is tasty, filling and nutritious. It makes a boat load. I usually freeze half of it right away, and the other half will last me about a week.
