I really want fried chicken but being that I already fell off the wagon once already, i REALLY don't want to go down that road... any suggestions??
Something that isn't fried chicken, but maybe like fried chicken :-)

Oven fried chicken--- homemade "shake n bake"!! Yummy. just throw whatever seasoning you like into some bread crumbs, dredge the (skinless) chicken in that, and bake it.

Baked chicken fingers, chicken nuggets, or even a baked chicken burger with a side of baked fries. It's good for you, lower in calories than nasty fried chicken, and delicious! :flowerforyou:

A bit of shake and bake (or find a recipe for your own breaded coating) on some boneless, skinless chicken breast. Bake in the oven. Better than fried chicken because you're not eating all of that nasty grease.

  • Mix some bread crumbs with grated parmesan cheese and fresh parsley, toss your chicken in it. Lay it in your baking dish and spray with olive oil (you can get a pump from any kitchen gadget store for about $10). The olive oil will get you that crunch that you want without having it cook in grease. The parmesan cheese also crisps up a little bit to add some crunch.

The Hungry Girl Cookbook has a recipe for a "fake" fried chicken that uses Fiber One cereal for the breading. I tried it last week and it was really good. I used a boneless, skinless chicken breast and the breading was really very crispy and tasty and reminded me of old fashioned fried chicken.
