Spaghetti Squash??

Spaghetti squash is awesome! I just have it with a spaghetti sauce!! hehe.
I make mine from scratch. ground beef, lots of veggies and tomatoes diced and pureed!0 -
I like it simple
shred the squash and season with salt and pepper and some cheese and little bit of butter
or
add some spaghetti sauce, meat and veggies.
I need to try more recipes too.
PS. Hint to make cutting easier - microwave the squash for 1 - 2 minutes before cutting.0 -
Spaghetti Squash has the tendency to be on the sweeter side. I personally like mine with tomato sauce, roasted garlic and a spicy protein... like spicy itallian chicken sausage.0

A bit of EVOO, some fresh basil,freshly ground black pepper to taste, and a fair amount of parma (vegan for me, thank you) = YUM!
(Oh yeah - it's really good with the pesto of your choice as well - I like a hazelnut based one I get at my local food co-op.)0 -
I make a recipe called Low Carb Primavera Delight
1 large spaghetti squash, cooked
2 cups broccoli
2 cups low carb marinara sauce
1 Tbsp olive oil
1/2 cup chopped onions
2 cloves of garlic
Just saute the onions and garlic in a pan with the olive oil for about 4 minutes, add the broccoli and cook until tender. In the meantime, bake the spaghetti squash ( I don't have my recipe handy so I'm not sure about the temp or time on that, but I'm sure you could find it online somewhere) When squash is cooked, run a fork through it until it makes spaghetti style strands and divide between 4 plates. Portion the sauted mixture evenly over the 4 plates and then add 1/2 cup of marinara on top.
The recipe I make only has 158 calories per serving!! Sorry, not a very thourough recipe, but it's VERY EASY to make and quite delicious. Could definitely add some ground turkey to up the protein and make it a whole meal0 -

YES! My spaghetti squash lasagna is to die for!!!
2 Spaghetti Squash
1 Medium or Large Yellow Onion
1 Green Bell Pepper
Minced Garlic to taste (I usually use 3 tsp with my sauce)
1 large tomato (or parts of many types, like I do, totaling out to 1 whole)
2 jars of spaghetti sauce (I use Classico 4 cheese and tomato/basil with this recipe)
1 package of ground chicken (optional - without, this is a great vegetarian meal!)
1 large package of Mozzarella Cheese. I usually use about 2/3 of the package, sometimes a little more.
Parmesan Cheese to taste
Squash:
Stab multiple holes in both squash's for ventilation.
Boil Squash(s) until each can be easily penetrated with a fork (not too soft, though... you don't want it to fall apart!)
Cut open each squash and gut the seeds.
Sauce
1) Chicken:
Pull apart ground chicken place in a frying pan with a small amount of Olive Oil
Cook until cooked thoroughly
2.) Veggies:
Chop/Dice the onion and the bell pepper
Place both in a frying pan with a small amount of Olive Oil
Also, add garlic in the pan.
Saute until onions are caramelized and bell peppers are soft(er).
*Place chicken and grilled veggies in a larger pot
*Add both jars of sauce
*Add sliced tomato's to sauce
*Bring sauce to a low boil, and then let simmer.
Lasagna:
Use a fork to scrape out the sqash. Layer the first squash in a pyrex baking dish.
Next, make a thin layer of the sauce on top of the squash.
Next, grate some Mozerrella cheese over the sauce.
^ Repeat these steps for second layer.
Bake lasagna at 475 for approximately 25-40 minutes. You may use a lower temperature and cook a bit longer. All ovens seem to do this a bit differently, in my experience.
When the cheese is melted and lightly browned, you're set!
Let cool, and serve!0 -

I just use regular meat spaghetti sauce, just more of it than I would with pastas. And Parmesan cheese. It's delicious

Ingredients
1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
2. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.
3. Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.
4. Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss with the sauteed vegetables, feta cheese, olives, and basil. Serve warm.

I just made a pasta/spaghetti squash salad
1 Spaghetti Squash
1 bunch of asparagus
1 package cherry tomatoes
1 can of sliced mushrooms
diced chicken breast
fat free italian dressing
Parmesan cheese
Squash:
Stab multiple holes in squash for ventilation
Bake squash until you can easily penetrate with fork
cut open squash and gut the seeds
Chicken:
I buy the fully cooked diced chicken breast that you just put in a skillet and warm
Asparagus:
Put asparagus in baking dish with a little olive oil
season with pepper, garlic powder and a little lemon juice
cook for about 25 minutes
cut up when cooked
Use a fork to scrape out the squash
Add diced chicken, mushrooms, cooked asparagus and cherry tomatoes
Add italian dressing to your liking
Top with Parmesan cheese to taste
Stir and Serve0 -
As a vegetrain, I eat pull squash sandwiches. Just roast it in the oven with BBQ sauce and then pull it with a fork and eat on a whole wheat bun.0

Cut it in half (long ways) and put it in a baking sheet. Top with a little bit of brown sugar and a little bit of butter. Let it cook in the oven and then serve with grilled pork chops. Delicious!!0
