Strawberry Cupcakes for under 140 calories
Here's my recipe for strawberry cupcakes. You wouldn't even guess they are diet friendly. I'm all for fitting in dessert as I love sweets and one of these cupcakes can help satisfy that sweet tooth without breaking the calorie bank.
Strawberry Cupcake
1 box Strawberry Supreme cake mix
12 oz diet sierra mist
1 bag frozen strawberries (thawed)
1/8 cup sugar
2 TB cornstarch + 2 TB water
Can strawberry frosting
1. Mix cake mix and diet soda. Bake according to package
2. In saucepan cook strawberries and sugar til soft. Puree with immersion blender or regular blender. (I also strained out seeds but you can stop here if you don't mind seeds.)
3. Add the cornstarch and water together to make a slurry; add to strawberries. Boil til thickened around 5 minutes. Cool completely in fridge.
4. Melt canned frosting in microwave in 5 second intervals til thin enough to drizzle.
5. Spread a small amount of strawberry sauce on each cooled cupcake. Enough for a thin layer. Drizzle melted frosting on top and enjoy.
1 cupcake is 138 calories, 3g fat, 10 carbs, 1g fiber, 1g protein
These were so delicious I'm excited for all the other combinations I could try. Like chocolate cake w/ raspberry on top, lemon, blueberry. The possibilities are endless. We can have our cake and eat it too.

Sugar - White Granulated Sugar, 6 tsp 90 cal
Argo - Cornstarch, 2 tbsp (8 g) 60 cal
Pillsbury -Frosting - Creamy Supreme Strawberry, 1 container (28 tbsp.s ea.) 1,960 cal
Did not add water or diet soda, assuming they have no calories.
Total calories 4,339
12 cupcakes = 362 calories each
24 cupcakes = 181 calories each
30 cupcakes = 145 calories each
Not sure I would “spend” the calories for such a small serving since I am still trying to lose weight. I might try them when I reach the maintenance stage.0 -
