lettuce wrap fish tacos with mango avacado salsa
low carb yumminess
count calories/measure serving size at your own will
for the salsa, chop:
avacado
tomatoes
red onion
cilantro
jalapeno
mango
cumin
fresh lime juice
(i use all fresh ingredients but you can sub if need be)
white fish (i like to use mahi mahi but it's hard to find in OR so i've been using tilapia)
i sautee the fish in coconut oil with cumin, chili powder, a dash of garlic salt and cracked pepper until nice and "blackened"
romaine lettuce in place of tortillas... pile on... squeeze a bit of lime an yummmm!!
optional side dish===> spicy black beans and blackened corn
1 can of low sodium black beans with jalepenos
sautee 3/4 can whole kernal corn in cocunut oil with cumin and chili powder until "blackened"
heat beans
mix the two and add as a side dish or throw it in the wrap!!
