SOUTWESTERN MEATLOAF
I got this recipe from the monthly newsletter that I get from my doctors' office. I didn't try yet but it sounds good and healthy and worth to share. Bon appetite!
SOUTWESTERN MEATLOAF
Ingredients (makes 8 servings):
½ cup rolled oats (no instant or quick cooking)
2 egg whites, beaten until frothy
1 can (14 oz) diced tomatoes (better the low sodium version)
1 ¼ lbs ground turkey (93% lean or better)
1 Tbsp. chili powder
1 tsp oregano
½ small corn kernels (fresh or frozen and thawed)
1 package (10 oz) frozen spinach, defrosted squeezed dry and finely chopped
¼ cup chili sauce or ketchup
Salt (not too much) and pepper to taste
Directions:
Preheat oven to 375 degrees. In a large bowl mix oats, egg whites and diced tomatoes with a fork. Add the turkey, chili powder and oregano. Mix the spinach and corn until they are all well blended. Season to taste with salt and pepper.
Transfer the mixture to loaf pan and bake uncovered for 45 minutes. Remove from the oven and spread the chili sauce or ketchup over the top and return the loaf to the oven. Cook until the internal temperature reaches 165 degrees on meat thermometer.
Let the loaf cool for 15 minutes before slicing.

Protein: 17 grams
Dietary fiber: 2 grams
Sodium: 360 grams (maybe less if you don’t use salt and/or if you use low sodium canned tomatoes
