Ground turkey and orzo stuffed bell peppers

Recipe:
1 lb Ground turkey
1 large onion, diced
8 oz mushrooms, sliced
6 large red / yellow bell peppers, stems and seeds removed
4 Garlic Cloves
1 Jar Alfredo sauce (low fat or original)
Salt , pepper , & garlic powder to taste.
1/2 of a 12 oz box orzo pasta
Directions :
Pre-heat oven to 350 degrees and lightly coat baking dish with cooking spray.
Bring large pot of water to a boil, add salt
Add orzo. Cook 9 minutes until mostly tender, drain. set aside.
In large skillet brown ground turkey until no longer pink at all.
Add mushrooms, onions, garlic, salt , and pepper. Simmer over medium low heat 12- 15 minutes or until vegetables are desired consistency. Remove from heat.
Add jar of Alfredo sauce to skillet.
Add orzo to skillet
Stir all ingredients until well mixed.
Using a large spoon stuff bell peppers with mixture and place in glass 9 by 13 pan.
Spoon leftover mixture into bottom of pan.
Cover with foil
Cook 35 - 40 minutes or until cheese is bubbly and peppers are heated through.
Serve with salad, and garlic bread if you have the calories! By my not exact calculations one whole pepper plus a little goo is about 400 calories. I could only eat half a pepper in one sitting, it is very filling.
