Breakfast and Lunch Ideas

So I'm trying to get my diet healthier for myself and my family but don't know where to start really. We are busy and don't have a lot of time to prepare meals so I need something that is quick and healthy. (By quick less than 45 min. to prep and cook).
What are some of your ideas/meals for breakfast and lunch?

Breakfast for hubby and me is usually a protein shake.... The little one will get scrambled eggs or waffle with peanut butter.
Lunches tend to be left overs from dinner. I will make a couple pounds of chicken in the crock pot on sunday and shred it up to use throughout the week. Its so easy to take individual portions and add bbq sauce, salsa, spaghetti sauce, etc... to make new meals to eat for lunches. Pre-cut and portion out veggies ahead of time too for easy grab and go.0 -
My favorite breakfast is a bowl of nonfat greek yogurt, berries and either homemade granola or a quinoa crunch that I make ahead of time.
Another quickie breakfast is scrambled eggs with cheese and veggies. You can make it in the microwave! My kids love it. I mix a couple eggs in a coffee mug with a wedge of laughing cow light swiss cheese and microwave it. Then mix in some spinach or mushrooms and you can eat it right out of the mug!
Lunch is usually a wrap or leftovers from the night before!0 -

I make egg muffins for the whole week and pull them out each day and nuke them. You can use most any egg casserole/quiche recipe and then just make them in muffin tins for single serving dishes. I do this with meatloaf and most everything else I can too then I can bring for lunch easy.
For lunch I do a lot of salads and soups. Both easy and you can make up lots at a time and then just pull out the bowl and bring to work. Another quick one is to make extra "taco" meat and then you can make wraps with that all week (or taco salad).0 -
I have oatmeal in my desk at work. Works well. Other days I'll pack fat free cottage cheese and mandarin oranges or some other type of fruit.
I pack my lunches the night before. Much easier mornings that way!
For dinners: make up a huge salad that you can dig into for a couple of days. Grilled protein on the George Foreman grill, some rice maybe or just extra veggies.0 -
I agree with the others, my favorite Breakfast is greek yogurt with 1/4 cup low fat granola. Its filling and healthy. I also start my day with a protein shake since I get up so early, then about 2 1/2 hours later I eat.
Another favorite is a 1/2 bagel or weight watchers size wheat bagle topped with cottage cheese, about 1/4 cup. Very good!!!
Lunches are homemade soups that are about 200 calories with protein(chicken or beef) and beans, or leftovers with lots of veggies...
I try to keep the carbs low and the proteins and veggies high during the day. I usually snack before and after diner as well.0 -
I have a protein drink and fruit for most breakfasts...I don't want to spend time figureing it out I just mix and drink
I pack snacks for the afternoon I have a mid morning snack, a late morning snack a lunch break snack and a late afternoon, I don't have a meal at lunch, sometimes I can't get to lumch break until 3pm so I'm happier snacking instead.
Snack Ideas:
hard boiled eggs

tuna salad
deli meat turkey/ham
hummis and veggies
fruit
yogurt
nuts
grilled chicken
baby carrots
diced tomatos
dinner left overs

I have yogurt with berries, an english muffin with an egg or peanutbutter, oatmeal or an omlette for breakfast.
Lunch is usually left overs. Or I'll make a big pot of soup on the weekend to reheat for lunch. Or PB and J or egg salad.0 -
i love my new breakfast. Usually only one the weekend because I don't really want to cook during the week..not a whole lot of time.
1/2 cup of Egg Beaters Southwest
1 Sara Lee 90 calorie English muffin
2 slices of turkey bacon
2 tbls salsa
Put it altogether and it's delicious with a nice kick. You could also add in some cheese, but I think it's good the way it is.0 -

It really depends on how many eggs you use and if you like them really dry or a little bit wet. I usually do about 35-45 seconds for 1 egg. 65 seconds for 2 eggs. If it's not done enough for you, just give the eggs a little stir and put back in for a few more seconds.0 -
I am always on the go as well. I find that cereal works best for me in the morning. Something healthy though, not those sugar packed cereals like Cocoa Pebbles or Capn' Crunch. Although I wish for them sometimes I get much more energy from Bran and Total. For lunch I make a sandwich a night in advance. I pack everything in a bag so that I don't forget anything.0

I make oats, with vanilla protein powder (makes it sweet and milky so nothing extra needed!) sometimes with blueberries
Or I have salmon and cream cheese on whole grain toast.
Avocado and tomato on toast and poached eggs.0 -
