I can't believe it's not butter chicken!

This is super yummy, only 230 cals per serving with 20 g of carbs and 26 g of protein.

3 peppers (red, green, orange)
1/2 sweet onion
1 tbsp fresh ginger
1 tbsp garlic
1 tbsp EEVO
6 frozen sole fillets (thin)
1 cup kale
2/3 cup 0% fat free plain greek yogurt
1 can no salt added hunts tomato sauce
1 tbsp garam masala spice blend (or use cloves, nutmeg, cinnamon)
1 tbsp curry powder
1 tbsp cumin
1 tbsp mustard seed

Saute ginger, garlic and onion in oil. Add spices, stir. Add tomato sauce and cut up peppers and kale. Cover, cook on medium - low for 10-12 mins. Add greek yogurt, stir. Add frozen fish fillets, cover and cook for 15 minutes. Cut up fish into small bite sized pieces, stir and serve (I like to add a little hot sauce).

Serves 6. I may have entered in fewer servings so I'll check - cals may be based on serving less... ENJOY!!!!

    Oh I had it serving 3! Changed to 4 - these will be big servings! I eat it as a meal though. Calories are 173, 16 g carbs, 20 g protein.
